Egg Fried Rice Restaurant Style

A flavourful, light & colourful Bengali egg fried rice...

In Bangladeshi Chinese restaurants, the classic egg fried rice is very popular. It's not difficult to recreate that nutty aromatic flavour in the kitchen. All you need are a few pantry staples that you may already have on hand.


Egg fried rice is one of my kids' favourites; pair it with some fried chicken for a filling and tasty dinner.


From prep to cooking, this fragrant and aromatic rice takes only 20 minutes. I used both fresh and frozen vegetables, but you can use pre-frozen vegetables to speed up the process. Although using fresh vegetables for this dish is refreshing.


This dish can be made in three simple steps:


  1. chopping the vegetables

  2. sautéing the vegetables

  3. cooking the vegetables with rice


INGREDIENTS

  • Leftover rice - 2 cups

  • Eggs - 2 large

  • Carrot - 1 medium julienned

  • Red & green pepper - 1/4 julienned

  • Peas - 1/4 cup

  • Onion - 1/4 sliced

  • Garlic - 3 cloves minced

  • Green chillies - 4 sliced

  • Salt to taste

  • Black pepper - to taste

  • Butter - as needed

  • Light soya sauce - 1/2 tsp

  • Tomato Ketchup - 1/2 tsp

  • Chilli sauce - 1/4 tsp

  • Oyster sauce - 1/4 tsp

  • Spring onions to garnish


INSTRUCTIONS

  • In a pan add a little oil and make scrambled eggs, season well with salt and pepper

  • Take the eggs out of pan and set aside

  • Add a generous amount of butter to the pan

  • Add onions and garlic and sauté for a few seconds

  • Now add your vegetables and season with salt and pepper, sauté for a few seconds

  • Add your leftover rice and mix well

  • Now add the sauces and scrambled eggs and mix

  • Cook on a high flame for smokiness and light and fluffy rice grains


A word of advice: always use leftover rice for fluffiness and butter for that nutty Smokey flavour.



It's as easy as that! As a result, it is one of my go-to recipes when I have guests and don't want to prepare a complicated meal. I adore this dish, as does my family, and I thoroughly enjoy preparing it for guests. It is truly delectable, and everyone enjoys it!
